Matcha White Chocolate Chip Cookies

INGREDIENTS
- 115 gr butter at room temperature
- 115 gr caster sugar
- 1 egg whipped
- 1 pack of vanilla extract powder or 1 teaspoon vanilla extract
- 175 gr whole-purpose flour
- 175 gr white chocolate chips
- 1 tablespoon Matcha powder (Amount can vary depending on type of matcha used and taste preference)
- Optional: 130 gr chopped walnuts/nut of choice

INSTRUCTIONS
- Pre-heat oven to 180 °C
- In a mixing bowl, whisk together room temperature butter with caster sugar. Beat for 2 minutes until consistency is light and fluffy.
- Then slowly add the vanilla extract, whipped egg into the mix. Beat again until smooth.
- In a small bowl, mix together the flour and matcha powder then slowly incorporate into the mix. Scrape the sides as necessary and combine until dough like consistency forms.
- Mix in the white chocolate chips and walnuts as desired.
- Let the dough rest for a few minutes as you line a sheet pan with parchment paper.
- Scoop out portions of the dough, size as desired, make sure to space out evenly keeping in mind expansion during cooking time.
- Insert into the over for ~10 minutes, until you start seeing the edges become golden but not burned.
- Take out and let them sit to cool and become firm for ~10 minutes.

NOTES
*You can switch out white chocolate chips with any kind of chocolate!
*If no allergies, addition of walnuts pairs best with white chocolate and matcha! However, nut of choice will make a great combination for extra tasty cookies!
